Buddha Bowl

The below are sample ingredients. This is a dish you can have fun with!

Ingredients

  • Brown rice, quinoa, bulghar wheat or other grain

  • Baked kumara and/or pumpkin

  • Roast eggplant or cauliflower

  • Diced tomatoes and cucumber

  • Diced avocado

  • Corn or grated carrot

  • Cooked beans or chickpeas

  • Hummus or other dip, like pesto or whatever you have made

  • Pumpkin or sunflower seeds

  • Coriander/parsley/mint

Directions

  • Prepare your cooked ingredients and throw everything together in a big, colourful bowl!

  • Why Buddha Bowl?
  • Buddha carried a bowl with him on his journeys and accepted food as donations, which he would eat at the end of the day.  Buddha bowls today are considered to be bowls of a large variety of different foods, and we make them often with a rainbow of colours, tastes and textures.
  • Nutrionally they are a great way to pack everything into one meal: beans, soy, or some kind of legume for protein.  Grain of choice.  Selection of different coloured vegetables.  Spices and sauces or dips for flavour.  Nuts or seeds.  And there you have your bowl ~ have fun!
