Chickpea Omelette

Ingredients

  • 1 cup chickpea flour

  • 1 tbsp flaxseed (linseed) meal

  • 1 tbsp nutritional yeast

  • 1 tsp turmeric

  • 1 tsp mix herbs

  • 1/4 tsp baking soda

  • Pinch of black salt

  • Pepper to taste

Directions

  • Mix the ingredients together in a bowl.
  • Add just over 1 cup of water. Give it a good whisk and voila, ready to fry into an omelette!

Notes

  • You can often find black salt (which is pink) at Indian supermarkets. It gives food an amazingly eggy smell and taste!
  • I prepare my dry mix on the weekend and it keeps me going for the week!
