Creamy Alfredo Pasta for Baby and the Whole Family

Ingredients

  • about ¼ head of a medium cauliflower, chopped into florets

  • ⅓ cup cashews, soaked in hot water for 10 minutes

  • 2 tbsp nutritional yeast

  • 1 tsp onion powder

  • juice if ½ lemon

  • ½ tbsp miso paste for adults and kids (skip miso for young babies under 9 months because of the sodium content.)

  • ½ - 1 cup of plant milk: start with half a cup, add more as needed

  • A pack of pasta, I used 250 g of chickpea spirals

  • Green peas to mix in the pasta - if desired

Directions

  • Cut the cauliflower into florets and steam for about 10 minutes, until soft. Cook the pasta, following package directions.
  • Soak the cashews in hot water for at least 10 minutes, or boil them for 2-5 minutes to soften.
  • Combine all the ingredients in a bullet blender or food processor, blend until smooth and creamy. Cover the pasta with the sauce, add green peas, and enjoy! If you have leftover sauce, freeze it for a quick baby/toddler meal later.
