Crumbed 'Fish' Burger

Ingredients

  • 250 g Banana Blossoms

  • ½ cup Plain flour

  • 3 ½ Tbsp Water

  • 1 ½ Tbsp Cajun Seasoning

  • 2 ¾ Tbsp White Bread Crumb

  • 1 Tbsp Extra Virgin Olive Oil

  • 1 Irg Tomato

  • ½ med Red Onion

  • 1 cup Red Cabbage

  • ¾ sml Carrot

  • 1 Tbsp Vegan Mayonnaise

  • 2 ¾ Tbsp Chipotle Mayo

  • 3 х Ciabatta Bun

  • ½ handful Fresh Coriander

Directions

  • Combine the flour, water and cajun seasoning, and mix until smooth. You may need to add more water.
  • Drain the banana blossoms, and pour the breadcrumbs into a shallow bowl. Heat the olive oil in a non-stick frying pan on medium-high heat. Coat each piece of banana blossom in the flour mixture, then dip in the breadcrumb mixture to coat.
  • Fry in the pan for 3-4 minutes on each side, until golden and crisp. Repeat until all of the pieces of banana blossom are coated.
  • Slice the ciabatta bread in half and toast in the oven or toaster until lightly golden, if desired.
  • Finely slice the red onion and tomato.
  • Grate the carrot and finely slice the cabbage. Mix together with the vegan mayo.
  • Assemble the burger with the chipotle mayo on the bottom, then add the banana blossom "fish", and the salads. Garnish with coriander. Serve immediately and enjoy!
