Crumbed 'Fish' Burger

250 g Banana Blossoms
½ cup Plain flour
3 ½ Tbsp Water
1 ½ Tbsp Cajun Seasoning
2 ¾ Tbsp White Bread Crumb
1 Tbsp Extra Virgin Olive Oil
1 Irg Tomato
½ med Red Onion
1 cup Red Cabbage
¾ sml Carrot
1 Tbsp Vegan Mayonnaise
2 ¾ Tbsp Chipotle Mayo
3 х Ciabatta Bun
½ handful Fresh Coriander
Directions
- Combine the flour, water and cajun seasoning, and mix until smooth. You may need to add more water.
- Drain the banana blossoms, and pour the breadcrumbs into a shallow bowl. Heat the olive oil in a non-stick frying pan on medium-high heat. Coat each piece of banana blossom in the flour mixture, then dip in the breadcrumb mixture to coat.
- Fry in the pan for 3-4 minutes on each side, until golden and crisp. Repeat until all of the pieces of banana blossom are coated.
- Slice the ciabatta bread in half and toast in the oven or toaster until lightly golden, if desired.
- Finely slice the red onion and tomato.
- Grate the carrot and finely slice the cabbage. Mix together with the vegan mayo.
- Assemble the burger with the chipotle mayo on the bottom, then add the banana blossom "fish", and the salads. Garnish with coriander. Serve immediately and enjoy!
