Ingredients

  • 1 tsp Extra Virgin Olive Oil

  • 1 Brown Onion

  • ½ med Carrot

  • 1 sml Courgette

  • ½ cup White Button Mushroom

  • ½ sml Yellow Capsicum

  • ¾ can Black Beans

  • 1 can Canned Diced Tomato

  • 1 Tbsp Ground Cumin

  • 1 Tbsp Ground Paprika

  • 1 Tbsp Ground Coriander

  • ½ tsp Chilli Flakes

  • 3 Tbsp Tomato & Capsicum Salsa (Mild)

  • 1 pkt Plain Corn Chips

  • 1 cup Dairy Free Grated Cheese

  • 1 handful Fresh Coriander

Directions

  • To prepare, dice onion and capsicum. Grate mushroom, courgette and carrot. Set aside.
  • Heat olive oil in a large frying pan over a medium heat. Add prepared vegetables and cook, stirring, for 5 minutes or until softened.
  • Stir in drained and rinsed black beans, canned tomatoes and ground herbs and spices. Add salt as desired. Stir until well combined and simmer for 5-10 minutes.
  • Serve nacho bean mix on corn chips. Garnish with salsa, fresh coriander and grated cheese.
  • Hot Tip:
  • Melt the cheese before adding salsa and fresh coriander for melted goodness.
