Double Chocolate Fudge Pots

Ingredients

  • 12 squares dark chocolate

  • Wet

  • • ¾ cup plant-based milk

  • • ⅓ cup coconut sugar

  • • ¼ cup coconut oil melted

  • • 1 tsp apple cider vinegar

  • • 1 tsp vanilla extract

  • Dry

  • • 1 cup wholemeal spelt flour

  • • ¼ cup cacao powder

  • • 1 tsp baking powder

  • • ¼ tsp sea salt

Directions

  • Pre-heat the oven to 180°C fan bake.
  • Mix wet ingredients in a bowl and set aside.
  • Sift dry ingredients into another bowl, then add wet ingredients to the dry and stir until just combined.
  • Pour batter into ramekins greased with a little coconut oil, add 3 squares of chocolate to the centre of each, and bake for 10-12 minutes.

  • Let cool for 10 minutes, then flip onto a plate or serve in the ramekins, with coconut yoghurt or ice cream on the side, and handful of berries.
