Double Chocolate Fudge Pots

12 squares dark chocolate
Wet
• ¾ cup plant-based milk
• ⅓ cup coconut sugar
• ¼ cup coconut oil melted
• 1 tsp apple cider vinegar
• 1 tsp vanilla extract
Dry
• 1 cup wholemeal spelt flour
• ¼ cup cacao powder
• 1 tsp baking powder
• ¼ tsp sea salt
Directions
- Pre-heat the oven to 180°C fan bake.
- Mix wet ingredients in a bowl and set aside.
- Sift dry ingredients into another bowl, then add wet ingredients to the dry and stir until just combined.
- Pour batter into ramekins greased with a little coconut oil, add 3 squares of chocolate to the centre of each, and bake for 10-12 minutes.

- Let cool for 10 minutes, then flip onto a plate or serve in the ramekins, with coconut yoghurt or ice cream on the side, and handful of berries.
