I’m excited to share my Christmas-inspired pakora recipe! Growing up in Singapore and Malaysia, my love for food was shaped by a fusion of flavours and inspired by my grandmother’s traditional Indian recipes. I love creating dishes that go beyond
traditional curry, and my homemade curry paste adds a delightful twist to elevate your festive menu.
Add a touch of Christmas cheer to your pakoras! These crispy, savoury fritters incorporate festive red and green ingredients like beetroot and baby spinach for a unique twist on a traditional Indian snack.

Ingredients

  • Handful of shredded beetroot

  • Handful of baby spinach leaves (whole)

  • 1 medium potato, cut into thin strips

  • 1 medium red onion, sliced thin

  • 6 Tbsp gram flour (besan) – available at Indian grocery stores

  • 3 Tbsp rice flour

  • 3 Tbsp Kavita's Kitchen Rogan Josh curry paste

  • Pinch of baking soda

  • 1 Tbsp salt, or to taste

Directions

  • Prepare Ingredients: In a mixing bowl, combine shredded beetroot, spinach, potato strips, and sliced onion.
  • Make the Batter: Add gram flour, rice flour, Rogan Josh curry paste, baking soda, and salt to the bowl. Mix well until the vegetables are well-coated. If the mixture is too thick, add a few drops of water as needed to create a slightly less thick batter.
  • Fry the Pakoras: Heat oil in a deep pan. Once hot, drop spoonfuls of the batter mixture into the oil. Fry until golden brown and crispy.
  • Serve: Drain pakoras on paper towels and serve hot with chutney or dipping sauce of choice.
