Ginger Loaf

- Dry Ingredients
1 1/2 cups flour
2 tsp ground ginger and 1 tsp ground cinnamon
1/4 tsp nutmeg, 1/4 tsp salt
1 tsp baking powder and 1/4 tsp baking soda
- Wet Ingredients
1 cup plant milk
1 tbsp apple cider vinegar
- Sticky Ingredients
1/4 cup coconut oil
1/4 cup molasses and 1/8 cup syrup (eg agave or brown rice syrup)
1/2 cup brown sugar
handful of dates, chopped
Directions
- Sift the dry ingredients into a large bowl
- In a measuring cup mix together the wet ingredients and let it stand
- Mix the sticky ingredients until combined
- Add the wet mixture to the sticky mixture. Mix well
- Add dry ingredients to the mixture from step 4. Add 1/4 cup of chopped drained ginger
- Transfer batter to prepared load tin.
- Bake at 180°C for 40-45 minutes or until a toothpick inserted in the centre comes out clean
- Once cooked, transfer to wire rack and cool
- Once loaf has cooled, dust with icing sugar and cut into slices
