Ginger Loaf

Ingredients

  • Dry Ingredients
  • 1 1/2 cups flour

  • 2 tsp ground ginger and 1 tsp ground cinnamon

  • 1/4 tsp nutmeg, 1/4 tsp salt

  • 1 tsp baking powder and 1/4 tsp baking soda

  • Wet Ingredients
  • 1 cup plant milk

  • 1 tbsp apple cider vinegar

  • Sticky Ingredients
  • 1/4 cup coconut oil

  • 1/4 cup molasses and 1/8 cup syrup (eg agave or brown rice syrup)

  • 1/2 cup brown sugar

  • handful of dates, chopped

Directions

  • Sift the dry ingredients into a large bowl
  • In a measuring cup mix together the wet ingredients and let it stand
  • Mix the sticky ingredients until combined
  • Add the wet mixture to the sticky mixture. Mix well
  • Add dry ingredients to the mixture from step 4. Add 1/4 cup of chopped drained ginger
  • Transfer batter to prepared load tin.
  • Bake at 180°C for 40-45 minutes or until a toothpick inserted in the centre comes out clean
  • Once cooked, transfer to wire rack and cool
  • Once loaf has cooled, dust with icing sugar and cut into slices
