Kopai (Samoan Dumplings)

Ingredients

  • 1 cup flour

  • water

  • 1 can coconut milk

  • ¼ cup brown sugar

  • ¼ cup cornflour

Directions

  • DUMPLINGS
  • Mix water and flour in a bowl to make a thick stiff dough
  • Spoon and drop small balls of flour lumps (puka) into a pot of boiling water
  • Let the puka boil for 15-20 minutes
  • Stir occasionally to prevent lumping
  • CARAMEL
  • Heat the sugar on low heat in a saucepan until it turns golden for about 5-10 minutes.
  • Add a cup of water from the boiling puka water and stir continuously to prevent lumping
  • Pour this caramel syrup in with the puka and stir thoroughly
  • Simmer the caramel dumplings for 30 minutes
  • SAUCE
  • In a separate bowl, mix the cornflour and water
  • Add coconut milk and sugar to make a smooth mixture
  • Add this mixture to the simmering caramel puka pot
  • Simmer and stir continuously until it thickens then serve!
