Meaty Burger Patties

Burgers taste better with patties made from scratch. It’s not only because it brings joy to know what you are eating, and a certain level of satisfaction for making an effort to prepare them, but also because they taste insanely delicious. These patties are packed with flavour, have a beautiful chewy but soft texture, and are perfectly crispy on the outside. All I want to
say is don’t walk; RUN to the kitchen and try them for yourself!

Ingredients

  • 1 tsp olive oil

  • 1 medium yellow onion

  • 2 garlic cloves

  • 1 tsp cumin powder

  • 1⁄2 tsp coriander powder

  • 1⁄4 tsp chili powder

  • 1⁄2 tsp salt

  • 1 can or 1 1⁄2 cups cooked and drained kidney beans

  • 1 can or 1 1⁄2 cups cooked and drained black beans

  • 1 Tbsp of parsley

  • 1 tsp soy or tamari sauce

  • 1 tsp red wine vinegar

  • 1 Tbsp extra-virgin olive oil

  • 2 Tbsp wholemeal flour

  • 1⁄2 cup of flour to coat the patties

  • A pinch of salt

  • 3-4 Tbsp extra-virgin olive oil or avocado oil to fry

Directions

  • Prepare the ingredients. Dice the onion, mince the garlic, and chop the parsley.
  • In a medium sized pan, warm the oil over medium heat. Add onion, garlic, salt, chili, cumin, and coriander powders. Sauté for 5 minutes, until golden and fragrant.
  • In a food processor, place beans, spiced onion and garlic mixture, parsley, soy sauce, red wine
  • vinegar, olive oil, and wholemeal flour. Blitz until all the beans are broken down and the mixture is
  • well combined.
  • Transfer the mixture to a container. Cover with a lid and refrigerate for at least 1 hour.
  • In a large, shallow, bowl, mix flour and salt. Warm the oil in a large frying pan over medium-high
  • heat.
  • Remove the minced beans from the fridge and, using your hands, shape a large ball (use approx.
  • /6th of the amount). Press the ball to shape a patty. Place the patty in the bowl with the flour and
  • flip to evenly coat. Transfer the patty straight into the well heated pan and fry on each side for approx. 4 minutes, until brown and crispy. Repeat with the remaining minced beans.
  • Store in the fridge for up to 5 days or in the freezer for 3 months.
