Tofu "meatballs"

350G firm tofu, blended in a blender or with a stick blender, until smooth 2 cloves of garlic minced ½ an onion finely chopped Handful of parsley chopped 1 piece of bread toasted and crumbed in a food processor or spice grinder 1 cup of rolled oats chopped in a spice grinder or food processor 2 tablespoons of tamari (or soy sauce) 1 stock cube (I used Massels beef style) Salt and pepper


Preheat oven to 200 degrees. Mix all ingredients together in a bowl until evenly combined. Take tablespoon sized portions and roll into balls. Place on a baking tray lined with baking paper. Bake for 20 mins until golden brown. Serve with spaghetti, tomato sauce and fresh basil. If you like, you can fry the balls in oil for the last 5 mins of cooking to get a golden brown crispy outside.
