Ginger Steamed Pudding

Ingredients

  • Batter
  • 2 cups all purpose flour

  • 2 1/2 tsp baking powder

  • 3 tsp ground ginger

  • 1 tsp cinnamon

  • 1 tsp mixed spice

  • 1/4 tsp salt

  • 1/2 cup vegan butter

  • 1/2 cup brown sugar

  • 1/2 cup soy milk

  • 3 tbsp treacle or black strap molasses

  • Pudding Base
  • 60gms ginger, roughly chopped

  • 3 tbs golden syrup

Directions

  • Cut a large square of baking paper and another of tin foil, and place to the side.
  • Put upturned saucer in the bottom of a large saucepan. Fill quarter full of water and bring to the boil.
  • Grease 1/2 litre pudding dish and add ginger and golden syrup to the base.
  • Mix flour, baking powder and spices in a large bowl. Add cold butter and rub using finger tips till mix resembles breadcrumbs and no lumps of butter remain.
  • Stir in the sugar, treacle and milk until combined.
  • Pour the batter into prepared pudding basin and spread it level.
  • Place the baking paper on top of the pudding basin, then the tin foil.
  • Tie a piece of string tightly around, to make a secure lid.
  • Place the pudding basin on top of the saucer in boiling water and simmer for 2 hours.
  • Check half way to see if water needs topping up. When cooked, pudding should be springy to touch.
  • Turn upside to serve.
  • Enjoy with vegan custard!
