Ginger Steamed Pudding

- Batter
2 cups all purpose flour
2 1/2 tsp baking powder
3 tsp ground ginger
1 tsp cinnamon
1 tsp mixed spice
1/4 tsp salt
1/2 cup vegan butter
1/2 cup brown sugar
1/2 cup soy milk
3 tbsp treacle or black strap molasses
- Pudding Base
60gms ginger, roughly chopped
3 tbs golden syrup
Directions
- Cut a large square of baking paper and another of tin foil, and place to the side.
- Put upturned saucer in the bottom of a large saucepan. Fill quarter full of water and bring to the boil.
- Grease 1/2 litre pudding dish and add ginger and golden syrup to the base.
- Mix flour, baking powder and spices in a large bowl. Add cold butter and rub using finger tips till mix resembles breadcrumbs and no lumps of butter remain.
- Stir in the sugar, treacle and milk until combined.
- Pour the batter into prepared pudding basin and spread it level.
- Place the baking paper on top of the pudding basin, then the tin foil.
- Tie a piece of string tightly around, to make a secure lid.
- Place the pudding basin on top of the saucer in boiling water and simmer for 2 hours.
- Check half way to see if water needs topping up. When cooked, pudding should be springy to touch.
- Turn upside to serve.
- Enjoy with vegan custard!
