White Bean and Potato Soup

Ingredients

  • 2 carrots diced

  • 2-3 celery stalks sliced

  • 3 garlic cloves

  • 8 small potatoes diced small

  • 3 tins white beans e.g. Cannellini

  • 4 cups vegetable stock

  • 1tsp Italian herbs

  • 1tsp oregano

  • 1tsp onion powder

  • 1/4 cup coconut milk

  • Salt and pepper to taste

Directions

  • Sauté the potatoes, garlic, carrots, celery and spices in a pot with some stock for about a minute.
  • Add the rest of the stock and bring to the boil then simmer for about 10 minutes
  • Add beans and coconut milk along with the other ingredients and simmer for another 10 mins or so.
  • Take half and blend, then add it back to the soup. Alternatively, blend it all up.
