Winning Fritter Base

  • 1 c gf flour

  • 1 c rice flour

  • 1/2 c chickpea flour

  • 1 1/2 tsp flaxmeal

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1 tbsp coconut sugar

  • 2 tbsp vinegar

  • 1 tsp salt

  • 1 1/2 c water/ plant milk

  • 1/2 c more liquid to thin if needed

  • 1 bunch of kawakawa(blessed) finely chopped

  • 1 bunch of horopito(blessed) finely chopped

  • Plus any vege you want to flavour it with; onions, leek, greens, corn, beans, lentils, chickpeas, potato, kumara.
    Add herbs, vegan cheese, liquid smoke, smoked paprika or any other flavour profiles.


  • Dry ingredients in a bowl with dry and wet ingredients in a bowl with wet, mix separately then add wet to dry and mix until combined, don’t over mix.
  • Mixture should double in size from baking soda and powder mixing with the vinegar.
  • Oil frypan and heap tablespoon in for Fritters or between Sandwich press for flat Fritter, or into tortilla for Quesadilla.


  • For sweet, omit salt and other savoury ingredients and add 1/2 cup more coconut sugar.
  • Use for Waffle, Pancake, Sweet Fritter mixture.
