Chocolate Chip Muffins
1 cup flour
¼ tsp baking soda
4 tsp baking powder
½ tsp cinnamon
½ cup brown sugar
¾ cup plant milk
1 tsp vanilla extract
1 flax egg (1 tbsp + 3 tbsp water)
1 tsp apple cider vinegar
½ cup vegan chocolate chips or chopped chocolate chips or chopped chocolate.
- Preheat the oven to 180 degrees. Grease a muffin tray with margarine.
- Sieve dry ingredients, excluding chocolate, into a mixing bowl and stir to combine.
In a separate bowl mix together the wet ingredients then pour into the dry and fold
until just combined. Fold in the chocolate then spoon the mixture into the muffin
tray so they are about 2/3 full. Makes 10-12 muffins.
- Bake in the oven for 20-25 minutes until golden brown and a skewer comes out clean.
Leave to cool then remove from the tray and enjoy!
