Banana Choc Chip Loaf

2 cups all purpose white flour
2 tbsp baking soda
1 pinch salt
1 cup packed brown sugar
1/2 cup soy milk
1/4 cup vegetable oil
1 tbsp apple cider vinegar
1 tbsp vanilla extract/ paste
5 medium soft brown bananas
3/4 cups small vegan
chocolate chips
Directions
- Preheat oven to fan bake 180 and line a loaf tin with baking paper.
- Put flour, baking soda and salt in a large bowl.
- Mash bananas until smooth. Add milk, sugar, apple cider vinegar, oil & vanilla to banana mix - stir until completely combined.
- Adding wet ingredients to dry, folding the mixture until combined, not over mixing.
- Gently fold in chocolate chips into batter - pour into loaf tin and bake for 40 to 50 minutes until knife comes out clean in center. Store in airtight container 2-3 days.
