Banana Choc Chip Loaf

Ingredients

  • 2 cups all purpose white flour

  • 2 tsp baking soda

  • 1 pinch salt

  • 1 cup packed brown sugar

  • 1/2 cup soy milk

  • 1/4 cup vegetable oil

  • 1 tbsp apple cider vinegar

  • 1 tsp vanilla extract/ paste

  • 5 medium soft brown bananas

  • 3/4 cups small vegan

  • chocolate chips

Directions

  • Preheat oven to fan bake 180 and line a loaf tin with baking paper.
  • Put flour, baking soda and salt in a large bowl.
  • Mash bananas until smooth. Add milk, sugar, apple cider vinegar, oil & vanilla to banana mix - stir until completely combined.
  • Adding wet ingredients to dry, folding the mixture until combined, not over mixing.
  • Gently fold in chocolate chips into batter - pour into loaf tin and bake for 40 to 50 minutes until knife comes out clean in center. Store in airtight container 2-3 days.
