Kopai (Samoan Dumplings)

1 cup flour
water
1 can coconut milk
¼ cup brown sugar
¼ cup cornflour
Directions
- DUMPLINGS
- Mix water and flour in a bowl to make a thick stiff dough
- Spoon and drop small balls of flour lumps (puka) into a pot of boiling water
- Let the puka boil for 15-20 minutes
- Stir occasionally to prevent lumping
- CARAMEL
- Heat the sugar on low heat in a saucepan until it turns golden for about 5-10 minutes.
- Add a cup of water from the boiling puka water and stir continuously to prevent lumping
- Pour this caramel syrup in with the puka and stir thoroughly
- Simmer the caramel dumplings for 30 minutes
- SAUCE
- In a separate bowl, mix the cornflour and water
- Add coconut milk and sugar to make a smooth mixture
- Add this mixture to the simmering caramel puka pot
- Simmer and stir continuously until it thickens then serve!
